  • There really ought to be an option to select all 5 attributes to describe Chef Brandon and his phenomenal work. We worked with (okay, he did all the work) in April 2023, to host a dinner commemorating the memory of the 111th anniversary of the Titanic disaster. The dinner was a vast undertaking and Chef Brandon worked tirelessly for over 15 hours to create a memorable and unforgettable experience. The menu consisted of over 12 different courses, much of which was either directly from, or inspired by, the menus distributed to 1st class passengers on the night of April 14th, 1912, aboard the Titanic. Chef Brandon arrived at our home on April 15th, a little after 12:00PM to start his prep for the gargantuan task ahead. We had connected several days ahead to review the menu, which I initially included on an invitation I had specially printed for the occasion. Chef Brandon reviewed the menu and curated his own version of it, which included recipes that were more updated and flavorful than their Escoffier originals. His attention to detail in regards to historical authenticity was critical to making this dinner party work, and I was sincerely impressed by his knowledge and use of ingredients to create these dishes. A few of these, would be roast duck in strawberry quince sauce, black truffle deviled eggs, roast loin of beef in demi glace, and smoked whitefish rilletes with pickled blackberries. Chef Brandon's use of flavors, as well as visual aesthetic, was absolutely on point for the occasion. I deferred to Chef Brandon on the shopping list, and also doing the shopping for us, which worked to everyone's benefit. His attention to ingredients and quality therein, showed a mastery of his craft.

  • This evening was a special occasion for me, and I really appreciated the time and attention that Chef Brandon put into making it as authentic and correct as possible. There aren't many Chefs that can accommodate the needs of a full-scale Edwardian, Downton Abbey-style party and actually pull it off with the success and satisfaction that he achieved. Chef Brandon is polite, courteous, and knows his craft. On top of all that, he treated our little fur baby (Chihuahua Terrier mix) with the respect he deserves, and offered him a taste of each of the 12 courses. I highly encourage working with Chef Brandon for those that wish for a First Class, culinary experience.
